Rice and rice noodles are the backbone of Malaysian cooking — good news for coeliacs. The hidden risk is soy sauce, which appears in almost every stir-fry and marinade and nearly always contains wheat. We know exactly which stalls use tamari or no soy at all, and which dishes are safe without modifications.

Where Gluten Hides in Malaysian Food

Malaysian cooking is more coeliac-friendly than most Asian cuisines — rice, rice noodles, tapioca, and coconut milk are the base of hundreds of dishes. But soy sauce (kicap) goes into almost every stir-fried dish, and standard kicap contains wheat. Oyster sauce and some curry pastes also contain wheat starch.

The other risk is shared equipment: high-volume hawker stalls often use the same ladle for soy-based and non-soy dishes. At the places we take you, the stallholder knows exactly which utensils touch which ingredients.

How We Handle It

We only include gluten-free stops where the stall naturally cooks without soy sauce, or where the stallholder specifically uses tamari and has confirmed this with us directly. We don't retrofit standard dishes — we choose stops where the dish is GF as it comes off the wok.

You'll taste things like nasi lemak, laksa (at stalls using rice flour noodles), satay with naturally GF peanut sauce, and Indian banana leaf rice — all genuinely safe, not modified.

Practical Tips

Useful to know: "Tanpa kicap" means without soy sauce and is understood at most stalls. Indian restaurants and Malay kampung-style cooking tend to be the lowest-risk cuisines for GF travellers in Malaysia.

Coeliacs specifically: Tell us before the tour and we'll flag every stop where shared equipment is a concern. Dedicated coeliac safety requires extra planning — let us know and we'll make it work.
