KL's food heritage cannot be understood without knowing the people who created it. Each wave of migration added new ingredients, techniques, and dishes to the city's culinary DNA.

Unlike Penang, which grew as a Straits Settlement, KL began as a mining town at the confluence of the Gombak and Klang rivers. Tin brought the Chinese, rubber brought the Indians, and the British administration brought everyone together. This created a food culture that is uniquely KL — less Peranakan than Penang, but more diverse in its influences.

The Hainanese who worked in British households created dishes like Hainanese chicken chop — Western-style breaded chicken paired with local soy-based gravy. It is a dish that exists nowhere else in the world because it was born from the collision of two cultures in one kitchen.

Nasi kandar tells another migration story. Nasi is rice. Kandar is the pole used to carry two buckets. Indian-Muslim vendors walked through the port with one bucket of rice and one of curry, selling to workers. Today, some of the best nasi kandar in Malaysia is found in KL.
