What is Bak Chang?
The Bak Chang, or Zhong in Mandarin and Chang in Hokkien, are glutinous rice dumplings stuffed with various fillings, and wrapped in bamboo or lotus leaves. They can be triangle shaped, square or round. But the shape doesn’t matter, they are all delicious.
The Fillings
Traditional Bak Chang comes in several varieties:
Sweet Chang — Filled with red bean paste or lotus seed paste. A dessert version enjoyed with tea.
Savory Chang — The most common variety, filled with salted egg yolk, pork belly, chestnuts, mushrooms, and dried shrimp.
Nyonya Chang — A Peranakan specialty, featuring minced pork seasoned with candied winter melon and a blend of spices.
A Taste of Tradition
What makes Bak Chang special is the wrapping technique. The bamboo leaves impart a subtle fragrance to the rice, and the triangular shape is a centuries-old tradition. Making Bak Chang is a family affair, with recipes passed down through generations.
